Peanut Butter and Chocolate Chip Cookie Bars

It's time again to wrap yourself in the spicy warmth of autumn. Technically we have two more days left of summer, but I haven't had to use my AC in the last week. I also froze walking around campus in a skirt- dumbSo yes, it's autumn, and I couldn't be happier. Last weekend I made some tasty treats for my boyfriend and I thought I'd share the recipe. They taste even better than they look!
Ingredients:
  1. 2 cups brown sugar
  2. 1/2 cup stick butter
  3. 2 eggs
  4. 1 tbs coconut extract ( Thats right, yumm)
  5. 1 tsp baking powder
  6. 1/4 tsp salt
  7. 2 cups flour
  8. 2/3 Reese's Pieces
  9. 1/2 cup chocolate chips

Directions:
Preheat oven to 350 degrees. Line a 9x13” pan with foil and spray with cooking spray.
Cream brown sugar and butter in the bowl of an electric mixer fitted with a paddle attachment. Add eggs and vanilla and beat until combined. Add baking powder, salt, and flour and mix.
Mix in Rees'e Pieces and chips
Press into prepared pan (dough is sticky, spray your hands with cooking spray to avoid it sticking to your hands). Sprinkle 1/4 cup Reese’s Pieces over the top. You can use about 1/4 cup of anything you have for this step: M&Ms, chocolate chips, etc. It just makes them look prettier.
Bake at 350 for about 25 minutes. (Be careful not to overcook - the center will still be jiggly when you take these out of the oven and they will finish cooking and firming up as they cool.) Cool completely before slicing into squares.

The pretzels are the easiest to make.

Ingredients:
  1. 1 pkg. Syders Butter Snaps pretzels- These are the ONLY and BEST kind to use. ;)
  2. 1 pkg Rolos
  3. 1 12 oz. pkg of Reese's Pieces or Pecans


Directions:
Preheat oven to 350 degrees.
Place the Rolos on top of the pretzels on a baking sheet.
Place the sheet into the oven for 2/3 minutes or until the Rolo's begin to get soft.
Remove from oven and quickly place the topping whether that is the Reese's, Kisses, nuts, and pretzels, on top. Try squishing the chocolate a bit so it really sticks to the pretzel. 
Place into the refrigerator for an hour.
